But, huh, I have a question. Is this just me or the red and yellow are a bit too bright?

I strongly agree with Red on this one. If you are making a skin of an aircraft as it was in 1918, then it should look bright and colourful because it would only just have been painted. Service life of WWI aircraft was usually less than a year - often very much less, so there simply wasn't time for the paint to fade. For example, the very first Foker D.VIIs began to arrive in May-June 1918 and the war finished in November. So even if a D.VII lasted without being written off it could only be about six months old at maximum.
Of course, if you are making a skin to represent the original aircraft as it would appear today at 90+ years old in a museum, then fading is fine.

I think the colours are a bit too saturated. Just my opinion, could maybe lower the saturation a bit. Otherwise extremely good skin.

NM, your incorrect. Paint faded fast then. The pigments were not light fast like today. Also whites turned yellow.
